Baingan India Chaat Week

Being an expert on nutrition, health and traditional regional cuisine is one thing. Being an academic expert botany researcher, a bird expert and trekker , is another.

But being able to innovate in positive ways, and then photograph it in yummy ways, is something my blogger friend Sangeeta Khanna is very good at.

This photo of chaat she had for dinner, had many drooling.  I even wrote a poem. And then I found out that this chaat doesnt use puris  at all !

Sliced grilled spiced aubergines (Baingan to us chaatwallas) , used as base, covered with aloo tikky crumble,  a cool layer of spiced dahi(plain yogurt), and a final splash of date and tamarind chutney.  And then , as a piece de resistance,  a generous fistful of some special small size cooked garbanzos , hitherto referred below as Chhole Ubale.

(The poem was written before the above discovery .  So read the high calories poem as you enjoy the concept of the high protein, low calorie chaat).

Have some ! :-))

Straight tough puris,
stiff
and all that,
participating in an evening,
in the midst
of some
finely chiseled onions,
matching bashful tomatoes,
some dada style
potatoes,
finally cooked and smashed
watched by a victorious
Lady Coriander
with the Chilly chamchas,
and waiting
avidly for a
fashionable Sev and Spice Sprinkle

The devout puris
overcome with all this
suddenly realise
the arrival of Chhole Ubale,
and
immediately grab
and hide behind
the dahi ghunghat;
where they come from,
puris don't
show their faces,
till
the various
Chutney ladies appear
and take charge of the proceedings...

The Incredible lightness of being a Paanpoley...

One way of trying to go on a diet, is to write poetry on delicious food photographs, instead of eating the stuff. Not that it works, but just saying.

My blogger friend Magiceye probably eats with a camera strapped to his forehead, which automatically clicks when he says "Wah ! Wah!" . I cannot think of any other explanation for the all the yummy photographs that appear during his various trips as well as  at his home meals.   This one , Paanpoley , was posted on FB, as well as here.

Paanpoley is a form of rice crepes , prepared after soaking, and grinding rice etc.  You can watch a video  on how to make it here.

Some folks have it with red-chilly -garlic chatni, and some with coriander chatni.

I need to stop. The .jpgs are too overpowering ......:-))

Just so all of you eat your heart out. First in original marathi, then in a possibly inadequate translation .....

(photographs and eating by Magiceye Deepak Amembal)
कोकणातली पावसात
तुडुंब भरलेली भातशेती ,
बांगड्यांची किणकिण, आणि पुन्हा पेरणी ;

 Monsoon full fields
and rice transplanting
in absolute flow
in Kokan,
the women,
pushing back
the tinkling bangles
to get on with the work.

Today, the rice,
completely one with the water,
helplessly poured on to the hot griddle
erupts with millions of eyes,
spewing forth
a sad steam....

A while later,
someone tries to
put things in ordered folds,
slides it on to a plate,
and says,
" Go. Have a wonderful life with the Chatni.....!"

Uniting to celebrate !

When a blogger friend Dhiren, celebrates his wife's birthday and Friendship Day, by making a Pizza for she and her friends, that too, complete with step-by-step photographs , one can only applaud ......and salivate, and admire his self control as he gets in for a closeup, without eating the cheese himself .

Don't know about you, but I can smell the yum stuff here. (The pizza is happening in Bharuch, Gujarat (on India's west coast)....)...........RUSH !

(all photographs by Dhiren Shah)

The humble onion
resting on a grainy bed,
groaning
under the weight
of the bossy tomato
all puffed up
because
it "knows" the sauce;
The peaceful capsicum,
trying its best
to
stay away
from the
red bossy types.

Chilliflakes
in the air,
oregano and pepper
fighting ,
and
its time
for the
blanket of cheese
to smother
all these fights.

They fight,
but melt
in the heated atmosphere...

Against
a common enemy ,
(Dhiren),
to fight
and go down,
with pepsi,
United !
