Floors, foods and thoughts...

My friend Slogan Murugan aka M. S. Gopal, has a wonderful blog called Mumbai Paused, where he posts some  amazing captures of life in Mumbai , and each of these has a story to tell .

Do have a look .  You will be amazed at what you find in your backyard.

He recently posted a lovely capture of little girls on Sant Savata mali Road (Victoria Rd)  playing what we used to call Bhatukli or House-House in our primary school days.  An imaginary cooking of imaginary items, using very down to earth actual kitchen stuff.

And then another capture, so many floors up and away, where even the imagination is store bought .

Slogan Murugan does the photos, and sometimes poems happen here. One such ....

There is
a
Thought for Food.

A foraging of intentions,
a collection
of rehabilitated stones
performing to perfection
wild in imagination
as they make a meal
fit for the
ones they love
nurtured so well
by hands
trying to imitate
Mother Earth.

And then
there is
a hungry mind
expertly fooled
into filling itself
alone
by sights, sounds,
and the needs of
the New World,
unlike anything around.

Food for Thought.

Golden Kindergaarten Pancakes....

When a friend decides to make some innovative whole wheat, apple, almond and cranberry pancakes for a little one's school dabba , and the little one herself  helps mix the batter , the resulting pancakes simply have to turn out golden !

A their golden soliloquy needs to be  heard.

आज पालक शिक्षक सभेला जायच्या तयारीत;

 Ma wheat
busy in her multifarious activities,
getting ready
for the PTA meeting,
and really bombarded
with sms's and tweets
from the almond, apple types;
"Guess what !
Cranberry Tai is here
from the US
and
We're dying to see
the little one's school"....

A nod from an indulgent Mom,
and
the apple saucing itself
steaming
in the heat of the excitement,
as the almonds
simply sliver and fall in,
pulling Cranberry Tai with them,
and Ma Wheat
dabs a bit
of vanilla cinnamom perfume,
sprinkles a bit of
effervescent soda
and falls across a griddle
turning golden
in pancake style.

A bit of delicious gold,
in a little tiffin box
in a little school bag,
and then
grinning foolishly
looking at the joy
on the face
of a little girl
eating in the recess....

The story of Ma Wheat at school ....

न्हवे काळे टिक्के लागतात;

नव्या नवलाई चे नवे लोणी ;

A Grinding Life ....

One of my friends Saee Koranne-Khandekar,  from  a FB group called Rediscovering Traditional Maharashtrian Cuisine  recently posted  this beautiful capture which  was part of an article she wrote on "Pantry Essentials to get you started in a Maharashtrian kitchen".

Go read that article to know the kitchens of our grandmothers, some aspect of which everyone strives to maintain even today.

Some compared this composition to a "still life ' one did in an Art Class. Some went completely nostalgic.

I just wondered if  people were really using these items today in a world populated with food processors, mixers, air fryers, ovens  and the like.  I wondered if people actually used the chutney stone today, and actually knew how to grind.

I still use some of these items.

And I also wondered what the PaaTaa , or the chutney stone at the centre of the composition below, and its consort, the WarwanTaa , might be thinking about...

First posted it in Marathi. Then did an English version for my non Marathi friends.

एक मशीन डौलदार पणे भाव खात उभे;
म्हणजे काही हुशारी नाही.;

Supremely unshakable,
unaffected ,
by the passage of time,
watching generations go by
year after year,
PaTaa Khot sits,
firmly ensconced in the kitchen,
in the company of a Warwantaabai,
much given to rolling around,
and smiles at the memories
of having cutting makeovers done
to himself every now and then.

An occasional stare
of discomfort and disapproval
from a soaked daal,
and a bunch of chillies
splitting all over in support,
he remembers being marked
sharply with a  nail
and hammered all over ,
to restore his original stone glory;
all followed
by a gentle all encompassing bath
and a rubbing dry.

Much appreciated
by deseeded tamarind ladies,
being treated by the WarwanTabai
and a wrapping together

with  a bit of salt,
before rushing for a year long gossip
in buxom china pots.

Then some flighty peanuts,
and their Soop Dance
as they shed covers
and roasted inhibitions,
before collecting
in a tasty sticky roasted crush
on the PaaTaa stone.

And then its the Warwantaabai,
personally standing up,
and  decimating
the coconut and garlic guys
to pieces,
much to the delight
of the siren mirchis,
corianders and kairi girls,
there for a chutney morning.

Of course,
burnt onions and roasted coconuts,
often arrive at their Waterloo,
sometimes followed
by a misleadingly languid
mustard mash,
meant to bring a zing
to a mango pickle
avidly waiting in a fancy pot.

Away to one side,
there sits  a posh contraption,
radiating page 3 attitude
and looking down its nose
at the Pata Khot and WarwanTaabai .

PaaTaa sighs, turns to WarwanTaabai,
and says,
" Some folks think
you are perfect if you have blades
that spin on electricity
so boringly same for all foods...
When will they learn
that we thrive
and hanker after
the touch of a Mother,
the feel of the food,
and the pouring of soul
into creating the dish,
as we grind  through our day ?...

Kande Pohe Mornings.....

My friend Shakti Salgaokar-Yezdani just celebrated a relaxed Saturday morning, making some excellent breakfast Kande Pohe, with the tadka in ghee instead of oil.  It is probably a tradition , but most young Maharashtrian girls learn to make tea and Kande Pohe, when they start off in the kitchen.  Shakti  learned that, and at almost double her age, so did I , when i was very young.  Kande Pohe Zindabad !

Kande Pohe are almost the original brand ambassadors of day-to-day middle class Maharashtra.

The indulgent washing of the Pohe, the fragrance of the kadhipattas ,  sharp intake of mirchi breath,  and the hing, onions, haldi , lemon juice etc  all falling in line and waiting for the Pohe..

All resulting in a uniquely  golden fresh Kande Pohe, sprinkled with Coriander leaves and Fresh Coconut.  Sometimes with a piece of lemon.

Diehard Kokan types often serve roasted Poha papad, and Mirchi pickle ,  along with it.

Purists tend to frown on sev and other farsan types hanging around the pohe.  Just saying .....

हळूच सांगितलेली कांद्याची चुगली ;

A gentle leisurely
Bhadrapad morning,
and the Pohe
sit snug
in a Rowlee,
shrugging off
the last of the water
after a fancy bath...

A sudden commotion,
as the agitated, cut up
Mirchibai
bitterly cribs
to the Kadhpatta ladies,
about the onions
making them  all cry.
The mustard seeds
cracking up in mirth
at that sight,
and the Hing lads jump in
to give them all a hi-five
in the hot oil...

A pinch of cayenne
managing an entry
along with a lemon in tears,
and the Pohe,
blurting out
"Early morning rabblerousers,
they don't let you
rest in peace, do they ?"

But the sight of  them all
sizzling together
is too inviting,
and the infatuated Pohe,
adorned with
Coconut and Coriander jewellery
rush in
amidst a confetti of salt and sugar,
to be a part
of a Kande Pohe  morning...

Away to one side,
watching it all,
Ganpati Bappa
quietly bends down,
clicks,
and whispers into the
ears of the mouse,
saying,
"Aiiyo, I've had
so much sweet stuff,
all these modaks and laddoos,
Come, lets taste
these wonderful Kande Pohe! ...

कोणि एकट कधीही नसत ;

The First Pithla War....

Someone asked about Ravan Pithla, and my friend Anjali Koli wrote a blogpost describing the Ravan-like qualities of the Pithla in question :  a angry red besan roasting, matching amount red chilly powder, and the works, all designed to get your tears to flow. So typical of the ten headed demon Ravan , the villain of  Ramayana.

As someone who has always supported the underdog, this is a shoutout for the amazing Kulthaacha Pithla, or Pithla made of roasted Horsegram flour, something so native to Kokan , Maharashtra's coastal area.

(It is known that before setting out on campaigns from his forts, with his armies, Shivaji Maharaj, along with his faithfuls, would always imbibe  big  bowlfuls  of  a  gruel made from cooking horsegrams in water, and this was considered great for stamina since it was excellent protein.... )

I mean the Ravan Pithla might sound powerful, but is not a patch on the magic of Kuleeth.

Clearly, even Oryza Sativa***  thinks so ....

गरम तेलात पाण्याला बरोबर घेउन उकळून पदार्पण;

 She sits,
Oryza Sativa*** ,
wrapped in a
hot mist
of her own making,
on a scrubbed golden brass plate,
anticipating the Pithla Arrivals.

Sometimes,
a fair Besan man,
gambolling in hot oil,
perhaps dark in anger ,
sometimes secretive
with cracking comments
with communist chillies
at the cost
of the demure kadhipattas;
then a severe thirst
for water or buttermilk,
with some cumin and coconut
brokering a peace,
and a final stubborn
place pouting
and protesting on the griddle.

And then sometimes
the dark and handsome Kuleeth,
Horsegram to you,
hardy as they come in Kokan,
emerging hot
from a tough roasting,
crushed fine , milled,

and simply infatuated by the songs
of the  lady-of-the-house  at dawn,
as she grinds them,

amidst the fragrance
streaming out of the front door.

A great meet up
with spicy  Onion and Garlic ,
willing cooperation with the
red chillies
and a complete dissolving
in joy
in the water,
as the situation
comes to  a boil

in cast iron,
amidst pieces of kokum
giving the finishing touch.

Oryza Sativa,
takes a deep steaming breath,
raises her eyebrows
at the salt sitting
to the side,
pines for the roasted Poha Papad,
still on its way,
and says,
"Whether it is Ram, or Ravan Pithla,
power doesn't attract me;
For me, the choice is always the Kuleeth !..."

***Oryza Sativa :  Fancy cradle name for Rice :-)
